UVR or an automatic karaoke generator?

If you only want the instrumental, stop at UVR. You don't need anything else.

What each one does

Ultimate Vocal Remover separates audio: a song goes in, the vocal and the instrumental come out as separate files. It's free, runs on your own machine, and nothing leaves your computer. At that job, it's the standard.

A karaoke generator does that and keeps going: it transcribes the lyrics, times every syllable, measures the pitch of the notes and builds something playable, with scoring.

Stop at UVR if

you only want the instrumental to play or sing over;
you don't want the file leaving your machine — that's a legitimate and final reason, and no cloud service can meet it;
you already know the lyrics and don't need them on screen.

In those three cases, installing UVR and stopping there is the right answer. There's no reason to use anything else.

Go beyond UVR if

you need timed lyrics on screen — that's the hard part, and UVR doesn't do it;
you want to know whether you're in tune, note by note;
you don't want to install anything or deal with models and settings.

Doing the lyrics by hand after UVR is possible and it's the traditional route: Karaoke Builder Studio or similar, about an hour per song. It isn't hard, it's slow. The real choice is between your time and the accuracy of automatic transcription.

The caveat on the automatic side

Automatic transcription gets things wrong, and it fails predictably: screamed, distorted, heavily processed or live vocals. On a studio recording with clear diction the result is good; on hardcore, it isn't. Anyone promising otherwise is selling.
